Pineapple Cream Cheese Cornbread Cake

Ingredients

1 ½ Cup Lodge True Southern mix

1 10oz can crushed pineapple in heavy syrup, do not drain

2 eggs

¼ Cup butter

4 oz cream cheese

¾ Cup sugar

¼ Cup pineapple juice

Directions

Spray a 11.5 × 17 inch pan with non-stick spray. In a large bowl blend cream cheese with sugar with an electric mixer, about 2 minutes until smooth. Add all other ingredients except the True Southern mix. Mix ingredients with a mixer until blended together. Add cornmeal mix. Do not overmix. Pour into the pan. Sprinkle with brown sugar and cinnamon mixture. Bake at 400 degrees for 40 minutes or until toothpick comes out clean.
