Blueberry Cornbread
Ingredients
2 Cups Lodge True Southern Cornbread mix
¼ Cup sugar
¼ Cup light brown sugar
2 eggs
1 ½ Cup Mayfield buttermilk
1 tbsp vanilla
½ Cup melted butter
1 ½ Cup blueberries
Directions
Preheat oven to 325 degrees. Spray pan with non-stick spray. Mix dry ingredients. Whisk eggs, buttermilk, and add to dry ingredients, then pour into melted butter. Don’t overmix. Pour batter into the pan and scatter blueberries all over the top. Bake for 40 minutes.
